Salmon & Asparagus Salad

Serves: 2 – 4 GLs per serving

This is delicious especially with the asparagus still warm. Serve with 1 small wholemeal pitta toasted or warmed in the oven with a thin spreading of houmous or lower fat cream cheese in the middle (+ 7 GLs).

1 bag of rocket salad
8 cherry tomatoes, sliced
4 slices smoked salmon, sliced into thin strips
14 asparagus spears
Olive oil & balsamic vinegar

Directions
1. Arrange the salad leaves and sliced tomatoes on 2 plates whilst steaming the asparagus spears for 2 minutes.
2. Slice up place the strips of smoked salmon on top of the salad and top with warm asparagus and drizzle with the dressing.

Serve immediately.
